12 Best Traditional Restaurants in Segovia

Segovia is a city that demands to be savored slowly. Famous for its towering Roman aqueduct and fairy-tale Alcázar, the real soul of this Castilian city is often found simmering in clay pots and roasting in wood-fired ovens. For travelers, understanding Segovia means sitting down at a table where time slows down and recipes have remained unchanged for generations.

The local gastronomy is rooted in the harsh, beautiful landscape of the Castilian meseta. Here, the cuisine is hearty and honest, built to sustain shepherds and farmers through cold winters. The undisputed king of the table is the cochinillo asado, or roast suckling pig, a dish so tender it is traditionally cut with the edge of a plate to prove its crispness.

Beyond the famous pig, Segovia boasts a deep tradition of Judiones de La Granja, large creamy butter beans stewed with chorizo and pork ear. Lamb, wild mushrooms, and river trout also feature heavily on menus that celebrate the seasons. Dining here is not just about eating; it is a cultural ritual that connects you to the history of Old Castile.

Navigating the dining scene can be overwhelming, as the city is packed with options ranging from tourist traps to hidden gems. To eat well, you must look for the signs of authenticity: wood-fired ovens, menus written in chalk, and dining rooms filled with local families. The best establishments honor the raw ingredients without overcomplicating them.

In this guide, we have curated a list of the most authentic and beloved traditional restaurants in the city. These are places where the staff knows the regulars by name and the house wine is always poured generously. Whether you are seated in a cave-like brick cellar or a sun-drenched plaza, you are in for a memorable meal.

We have focused on venues that prioritize time-honored techniques over modern fusion trends. You will find no foam or deconstructed desserts here, just solid Castilian cooking that has stood the test of time. Each recommendation offers a distinct atmosphere, but all share a commitment to quality and heritage.

Before you set out on your culinary journey, remember that Spanish dining hours are later than in most of Europe. Lunch typically begins around 1:30 PM and dinner rarely starts before 8:30 PM. Arriving early often means having the restaurant to yourself, which can be a quiet, intimate way to experience the city’s hospitality.

Very happy to visit this restaurant. Cochinillo was great, crispy skin and juicy and tender meat. Cochifrito was also nice but the grilled one is still the winner. The 21st century salad is something that you just have to try (one order is good for 4 people, you can order half racion if there’s just 2 of you). The whole suckling pig is good for 6 portions, each portion is generous. They also have kids menu which have some tasty items. Bread is free as well as toasted bread that came with liver pate and pumpkin spread (i think)

We stopped by around 9 PM after visiting the aqueduct. Even without a reservation, the staff kindly managed to seat us. We ordered the suckling pig and the monkfish—both were fantastic! Our waiter was incredibly patient and professional throughout the night. We finished with the cheesecake, which had a unique, unexpected twist to it.

We did a day trip to Segovia and decided to have roast pig. Jose Maria was one of the best restaurants on our whole trip. The host, the servers and junior servers were all great. The tomatoes and tuna starter was refreshing. The roasted pig was delicious. Crispy skinned and super moist meat. The Segovia layered cake was yummy. Definitely worth the hype and roadtrip here.

Restaurante José María was one of the highlights of our trip to Segovia. This place is unquestionably among the best restaurants in Spain and fully deserves its spot in the Michelin guide. Everything is superbly organized. First, the service – flawless. Second, the fact that we managed to get a table for lunch without a prior reservation was almost a miracle. We had to wait, but only about 30 minutes until a table became available. While waiting, we enjoyed a Vermouth de grifo as an aperitif, and the restaurant kindly offered us a local cheese tapas as a complement – a simple gesture, but it made the moment truly magical. For the meal, we chose two of the restaurant’s signature dishes: cochinillo asado (roast suckling pig) and solomillo de jabalí con salsa (wild boar tenderloin with sauce). The preparation was nothing short of divine. I never imagined that wild boar – a game meat – could be cooked so tenderly and softly. The cochinillo asado was an absolute fairy tale. Everything, from the cooking to the ceremonial carving of the pig on a special plate that showcases its softness, was incredible. The lunch, including wine and coffee, cost around €100 for two – but it was a memorable gastronomic experience. To complement the meal, we highly recommend pairing it with a local wine. The restaurant will gladly guide you to a good choice. We left extremely satisfied and will happily return again.

Price is a bit expensive but you absolutely get what you paid for. Portion size is great and the food is simply delicious. It was our first time trying Cochinillo, and Jose Maria met all our expectations. The steak is also really good!

We are definitely coming back, great food and very friendly staff! We got a few appetizers that are typical of the restaurant and the suckling piglet (half a portion each), plus dessert, tinto de verano e coffee. Amazing quality/price ratio, especially compared to other overrated and overpriced places in town. A must do in Segovia!
Chan Kim★☆☆☆☆
Came here as a solo diner drawn in by the hype around the cochinillo. The food arrived quickly, which I appreciated. However, the suckling pig (€29) was more bone-heavy than expected depending on which cut you get — worth knowing before you order. Overall the food was decent but didn’t live up to the glowing reviews or the reputation. Feels geared toward tourists rather than locals these days. A beer was €5 and they charge €1.50 for bread, bringing my solo lunch to €35.50 total. For that price I expected more. Not a bad experience, but there are better value options in Segovia.
Natalie★★★★☆
Food was decent, a bit on the expensive side but service was great. When we told them we’d like to share everything, they helped divide all the dishes up before serving it to us. We ordered tripe and bean stew, grilled veal and a portion of suckling pig
Jason Botzas★★★★★
This restaurant is also “bar”. I went in the afternoon looking for the restaurant, but all I really wanted was some Tapas. Adorned with friendly locals at the bar, I got a beer and some croquetas. Beer was nice and so were the croquetas. Friendly and cool vibe, would come again and would like to try the restaurant if I had more time.
Yoko★☆☆☆☆
0 star, waste of money. Roast pork with several pieces that were too tough to chew. Not worth €29 at all wouldn’t recommend. The waiter was not so nice either, I wonder it’s because I’m traveling alone and not ordering much? Anyway, disappointed.

Iconic restaurant with amazing view of aqueduct. I was expecting typical touristy food but I was pleasantly surprised by the quality of the food (which was still pricey). I particularly enjoyed the piglet and which was a huge portion. I thought the aubergine was too sweet (drizzled in honey) and I disliked the truffle tortilla. Overall, portion sizes were good and food tasted fresh. The service was also excellent and they definitely indulged the mor demanding members of my party. Recommend for a special meal in Segovia
Lucy McNamara★★★★★
Very special place where everyone working there seemed like family! Very pleasant and attentive. We went because the cochinillo was very recommended by friends, and asked for salad and patatas that came in a big bowl... More than plenty deliciousness! We got lucky a larger group ordered the cochinillo and they show the traditional wat to cut it with a plate, since it is so tender! I ordered the postre sorpresa - enough to share! You sit next to the acueducto 😍 We enjoyed our lunch all around!
Lainey Allison★★☆☆☆
Despite the good service and historical ambience, we won’t be back to this restaurant. We started off absolutely impressed by the truffle tortilla which had a deliciously savory flavor and devoured it. Since it was the start of the meal, we were very much looking to the main course. Unfortunately, this is where things fell absolutely flat. The cochinillo, which is supposedly the signature dish, was gamey and the skin was inedible. That offputting smell of pork (needs to be cooked properly to get that out) was very present and the meat was bland. As far as the solomillo, despite being tender, it was not seasoned and the gravy that topped it severely lacked salt. We had the same complaint with the vegetables and potatoes — no salt at all. I also find it unfortunate that they allow patrons to smoke while other people are trying to enjoy their food. We have a small baby of four months old, and the table right next to us was permitted to smoke with the cigarette wafting into our faces the entire time. I know it’s Europe, but there are restaurants that don’t allow smoking unless other people are not eating — which at this caliber, is necessary. Overall, way overpriced for what it’s worth and unfortunately no seasoning whatsoever. We won’t be back.
Cristiano Anderson★★★★★
A truly exceptional experience from start to finish. The food was outstanding; the show added character and atmosphere; the service was attentive and polished; and the location itself was remarkable. What stood out most was the sense of tradition carried through every element of the evening. Simply superb.
Ruby P★★★★★
We ordered a whole baby pig for our table of 6. Had the whole ceremony and smashing of plate for a dramatic presentation. Started with jamon before the baby pig was presented. Must go to restaurant and meal when visiting beautiful Sergovia. In summer opt to sit outside.

We had reservations at a local famous restaurant but while walking around Segovia, we asked a local about the best local restaurant. They told us to go to Asador Maribel. The BEST GASTRONOMIC experience I had so far on my trip to Spain 🇪🇸. From the start we were welcome by the friendly staff who gave us a tour of their kitchen and their Asador (wood oven). We had the fortune to have Jorge as our server. He treated us as royalty. The way he explained the menu and later served us the food was elegant precise. The food was exquisite. From the Gambon, to the soup, to The cochinillo, to the veal.

Our server was so friendly and welcoming. We really appreciated that he went the extra mile in serving us and also did his best to communicate with us in English through Google Translate. Very happy to have tried the suckling pig and lamb.
Mario Yesquen★★★★★
My first cochinillo. And what a place to have it. We spent the morning walking Segovia, the aqueduct, the cathedral, the Alcázar, and by lunchtime we were ready to sit down and eat properly. Asador Maribel delivered on every level. The restaurant is located just a couple of blocks from the main tourist area, close to the Escultura Árbol Navideño Segoviano roundabout. That slight distance from the crowds made all the difference, we sat outside on a perfect afternoon, with a beautiful view and a relaxed pace that you simply don't find in the more central spots. We started with a cold beer, well deserved after all that walking. Then came espárragos con papada ibérica, the Iberian pork jowl took an already good dish and elevated it completely. Croquetas de jamón, excellent as always. And then the cochinillo a la Segoviana. Crispy skin, tender meat, and the kind of flavor that reminds you why this dish has been a Castilian classic for centuries. As someone who has always loved pork, this plate took that love to another level entirely. We finished with Ponche Segoviano, the local dessert, and the perfect way to close a meal like this. A word of advice, reserve in advance, and when you do, make sure to specify whether you want the cochinillo or the lechazo. They need to know ahead of time. Service was attentive, warm, and genuinely gracious from start to finish. A memorable meal in a memorable city.

Delicious from start to finish. Make a reservation. There is an English menu and English speaking staff. I had the croquetas and chorizo (half portions). Both delicious (but the chorizo was a bit dry). The suckling pig was excellent. Delicious crispy skin and juicy meat. It’s not served with anything so get a half portion of fries and salad to round it off. Excellent wine list. Don’t get in the way of the staff when going to the bathroom or they will run you over! Highly recommend.
javier rivero★★★★★
Asador Maribel is a top spot for authentic Castilian cuisine. The cochinillo and lechazo are outstanding—crispy on the outside, tender inside—and the roast lamb is equally delicious. Cozy, rustic atmosphere, friendly service, and great value make it a must-visit in Segovia.

This would definitely be my favorite spot in Segovia by far. It’s not a tourist trap at all, and as they say, Segovia is not just about pork — this place proves it! We tried the Angus beef, and it was cooked to perfection. The appetizers were also excellent. I highly recommend trying the tomates aliñados, patatas bravas, and ensalada de puerros tiernos. Both the outdoor and indoor seating areas are classy and inviting. Even though we didn’t have a reservation, the staff did their best to accommodate us and provide great service. Definitely a place I’ll be coming back to!

What a great restaurant! The food and service were magnificent. Had the cochinillo menu and was so much food! Crispy and delicious!

Sensational woodfired and perfectly crispy skin on the cochinillo ( suckling pig) with exceptional service, table-side meat carving, and perfect dressed side salads.. a fabulous experience in Segovia. A very smart restaurant, beautifully renovated and wonderful ambience. Highly recommended.
Allen Chan★★★★★
Meson de Jose Maria across was too full so we randomly came here and it was so good!!! Only thing is we ordered a single house menu to share that clearly said “jug of wine”, but we only got a glass. When I asked, the waitress said because we only ordered 1 so only 1 glass. If we ordered 2 then we’d get the jug. Not sure what to make of it but still pretty good value though (compared to Seattle). But I still think I should’ve gotten jug cause that’s what’s on the menu 😆

Best meal I’ve had in Spain, absolutely incredible. Their own home made bread is amazing, rivals the suckling pig! (Well almost!) Service is lovely, you don’t feel like you’re in a tourist town at peak season at all.

Fantastic dinning experience with great attention and fantastic food! The suckling pig is so crispy outside and so tender inside. Much better than the one so tried from the famous Meson Cándido. Highly recommended for anyone who wants to try the famous Segovia Suckling Pig!

Amazing food, we had a half pig between 4 people along with the recommended beans and soup and it was amazing. You truly feel like you are back when knights were wearing armor, lasses were slinging beer and the goats were roaming free. Highly recommend!

The owner of this restaurant is very nice. The service is great, and the menu is diverse. This is a decent restaurant! Good for a date. The food is also delicious, and I recommend people come here to eat.

We came on a Thursday at 8pm and were the first guests, The owner handles everything himself and was a great host - despite not talking any English he knew how to communicate and help with the selection. We had a wine of recommendation - very good price value (15.80), the traditional bean dish - a bit bland for my taste (I like the Mexican version better) and the suckling pig for two - perfect on point and could have served three. Shared the only available dessert and had a coffee - both perfect - to finish. He served us a homemade Honey liqueur on the house and we were in a happy food coma. Local atmosphere, great food and a personal service experience - 10/10 would visit again. PS: He offers free taxi to his place, so maybe call him for that Improvement point: The breadbasket was a bit dry and bland

The crew was amazing. The food was outstanding and the suggested wine was very good. We had the local jumbo beans with chorizo and morcilla, (blood sausage) everything very good.

Asymptomatic celiac here. Very good food and very good value for the daily menu, portions are large.. Everything on the menu apart from a soup and a fish is gluten free. They also serve normal bread so be careful with cross contamination if someone in your party orders it. Very good service. Definitely recommend eating here.

So disappointed ! Recommended by our accomodation and good reviews on line but we had an awful experience. Very rude ‘welcome’ by the waitress this afternoon who just pointed at a table. We sat by the bar as it was quite busy and were promptly ignored for about 10 minutes while other people (who arrived after us) were served. Eventually managed to order drinks and food. Moved to a corner table once free. Croquettes arrived quite quickly (and were delicious) but they were literally slapped on the table. Followed around 5 minutes later by blood sausage, again very tasty but shoved at us. We then sat with empty glasses for around 15 minutes while attempting to get someone’s attention for a refill. 20 minutes later after asking after the rest of our order a luke warm watery soup arrived (8€) followed by cold dry chips (7€). No smiles, no please or thank yous from Staff. Not at all what we were looking forward to.
David Lawley★★★★☆
Good value menú del día for 18 euros, which includes 3 courses, bread and a glass of wine. We ate the judiones de la granja and the caldereta de cordero, which were good, without being outstanding. Service was very rapid, and indeed we asked for it to be slower, so that we had enough room for the postre!. Overall, a satisfactory experience

A taxi driver in Madrid who had lived a long time in Segovia told me—after I told him I came to Segovia for work every week— I had to come here and try the morcilla. Oh wow, he wasn’t wrong. This will now be my favorite spot to unwind after a day of classes!

I am always interested how renowned restaurants care for their customers, especially solo patrons. At El Bernandino in Segovia, I was relegated to the rather empty basement, which was ok really, but the main room was lively and filled with lots of light, rather than a group room of tables of 8-10. They plopped the dishes of food down like a cheap diner with no conversation or, "please enjoy your meal." It wasn't until one of the servers saw me take a picture of the staff congregating on their phones and laughing for a while until she came over and asked if "somethingis wrong,....then she paused, and asked, "is the meal good?" Then she took away the empty bread basket while i was still eating the main without asking if i would like some more, e en if there was a cost more than the $5 they charge for bread. For a $50 lunch, they ought to be a little more attentive or at least cordial. The white bean soup was really good, it had a variety of pieces of ham and sausage in a tomato based broth. The main was the famed suckling pig that was quite tender and seasoned nicely. More than halfway through eating the dessert, a delicious marzipan cake in almond milk, the server asked if I wished coffee... too late. The food rates well, the service not so much.. they were not busy when I arrived. Really, I'm not snooty, but the customer ought to come first. I'm sure things were very different 86 years ago when they opened.

We had a good time here. Food was well present and delicious. Service is okay if you dont expect too much, waiting time for being served was acceptable, staff with blank expression are common in Spain. The boss Granny was nice! She let me be seated with warm smile even I came 10mins earlier than the restaurant opening time.
Ryan Harding★★★★★
Had the fixed Menu de Sibarita advertised outside at €19 per person. Loved the goat cheese salad (ensalada de queso de cabra). For main course the pork tenderloin with peppercorn sauce (solomillo de cerdo a la pimienta) was delicious with lovely potatoes and also the hake casserole (Merluza a la cazuela) was delicious. A meaty fish in a tasty sauce served with some shellfish. The price included a drink (we chose the house red wine, which was good) and a dessert, for which we chose the flan. It had a superb smooth texture and was served with a vanilla sauce and bittersweet caramel which went very well with it. If we are in Segovia again I'm sure we'll make a point of eating here again.

We had our best ponche in Segovia in this restaurant. The cochinillo was very delicious, crunchy skin with tender meat, but without the strong smell. Also the waiters were all very friendly. Highly recommended 👏

The conchinillo was great! The staff were very friendly and humorous, and quick. This place is in a touristy part of town so be mindful that parking close to the restaurant is challenging. There is underground parking where the aqueduct is and it’s a 5-10 minute walk away.

Lunch stop during a day visit to Segovia! This place reflects the vibe of this magnificent city - medieval sharm! Multiple rooms with cozy decor! While tons of artifacts all over the place - it doesnt give a sense of clutter! Service was professional quick and friendly! Menu is traditional Spanish dishes - we tried a little of everything - we also had various soups - i personally ordered castile soup - it was ok. Probably would opt to try something else next time - but not because of poor quality - but more of a taste preference! House wine was great! Rich and tasty! Prices are a bit above average so if you want a more budget meal - this is not the place!! Overall - solid 5! 4 stars only for food and thats only because of taste matter! But certainly no regrets. I would not advise to drive there - park somewhere outside the old city and walk Segovia!!! It is worth every step

Amazing place, very cozy and well decorated.giving you the vibe of an old authentic Spanish restaurant. Food and dessert are very tasty. We got lamb suckling chops and pork suckling chop. Both grilled perfectly and taste very good. House wine is tasty! For the dessert we had puff pastry and taste like heaven! Really recommend this place

This restaurant is located very centrally in Segovia. When you enter, you’re greeted by very friendly staff which are super professional. The restaurant itself is very traditionally decorated. The food served is traditionally Spanish. The Cochinillo is one of the best in Segovia. Highly recommended to also order the starter plate which contains different specialties from the region!

Had a really enjoyable meal here on a quiet Sunday evening. The Sopa Castellana was a tasty starter, followed by wild boar for my partner, and the hake stew for myself. Both were delicious and plentiful! Washed down with a reasonably priced house wine, highly recommended

My mum and I had the most wonderful dinner experience at El Secreto de San Clemente. The tomato Salad, traditional segoviana suckling pig, and the Ponche Segoviano dessert were all top class, perfectly flavoured, and I would highly recommend each one. HOWEVER, the single best part of our dinner was our fantastic waiter Cesar. Kind, attentive, funny, and welcoming. Cesar’s presence turned our dinner from something wonderful and unique into a once-in-a-lifetime experience! Go for the food, go again for the Cesar’s service!

Nice restaurant in Segovia main street. We ate local specialty Cochinillo de Segovia (roasted pig). Young waiter from the restoraunt was very helpful and nice. Even though the weather was chilly outside, we ate in warm atmosphere thanks to mobile gas burner stoves. Warm reccommendation for this place.

Absolutely incredible. That was one of the most tasteful burgers I’ve ever had, we had incredible service, they gave us free water which almost never happens here, some in the group I was with got the meal of the day which includes a dessert and they gave me a free dessert because I was a part of the group. I couldn’t recommend a place any higher!

We ordered a duck, salad and eggs. Not tasty . Duck is hard, tough. The salad contains only mayonnaise, and a little bit tuna. Don’t recommend this meal at all! At the Sagovia there are a lot of great restaurants..

We stopped by and enjoyed the excellent lunch special! The place has character and a backbone, not bending to the will of tourists, but rather offering authentic local dishes for those who are interested. The lunch special was generous and offered three substantial portions. The tagliatelle starter was a hit, excellent creamy red pesto sauce. The Castilian soup is a local dish—a bit heavy and salty, but could make for a nice hearty treat on a cold day. The main dishes were great. Some minor issues with seasoning, but overall enjoyed the food. The salmon needed a hit of citrus and the cheesecake dessert didn’t have the best texture. Overall a great deal for lunch and a great local experience. The decor is rustic and welcoming, giving you the hit of Spain you needed when you booked your trip.

Delicious food with beautiful presentation. We had the suckling pig - crispy skin, succulent and tender meat, well seasoned, amazing potato on the side; stuffed leeks - refreshing, interesting textures; and flat bread topped with creamy pork and mushroom - crispy bread, flavourful topping. Prices are slightly higher than average, but portion is very generous. Location of the restaurant is slightly hidden on a quiet alley, but easy to find. Excellent service - swift, courteous, not pushy. Nice, cozy ambience; very clean; charming interior. Highly recommended.

The atmosphere is like a family restaurant atmosphere, clean and warm. It’s pretty good. The food is tender and tasty. I like the soup and squid. The location is not on the main street but it’s like less than one minute away, which is perfect for us as it’s not a crowded with tourists. After we told the staff we were kind of in the rush, as we are with group tour, they arranged the dishes very efficiently and they’re warm and friendly. Overall, highly recommend.

If you are looking for a cochinillo that won't break the bank, this is definitely the place. Booking recommended as it gets quite busy during the weekends. Fast service too. It's also a bit hidden from the main street. Lovely service, the owners are attentive and friendly. Ponche segoviano was a great dessert 🍰

I came here with a tour group for tapas and a drink and I decided to try the 1/4 suckling pig with potatoes. The pig was tender as expected but had no flavoring. I think they forgot to season it. As far as potatoes, it came with 3 small potato wedges. The salad was huge. I couldn't finish it. The desert, Ponche Segoviano, was excellent. That I really liked. Otherwise, the restaurant is average with high prices.

Had a great lunch with the family. Has a homey vibe. Restaurant was a recommended restaurant by our tour. Ordered the conchinillo and spanish cake.

Wife liked her (customized) fish dish; my cheeseburger however was not as appetizing, left it as is in the pic. Staff were not as affable, in comparison with other restaurants we've been. They seem to be in a rush - taking your order, explaining the dish, not one smiled to anyone, etc - nit picking? Inconsequential? Oh well, must be the weather.

Luis waited on us and we had a great time! The food was delicious! The patio was comfortable with the shade from the nearby trees. I would definitely come back!

It is not worth it. We came to this restaurant because it was part of the tour but otherwise we would have gone somewhere else. The place is dirty, specially the toilets were disgusting. The service was super slow and messy. You can feel how miserable the staff is in there. The food is not even that good, edible but nothing special. If you can, go somewhere else.

Essential Tips for Dining in Segovia

To make the most of your culinary tour through this historic city, it helps to know how the locals eat. Understanding the rhythm of the day and the customs of the table will elevate your experience from a simple meal to a true cultural immersion. Here are a few practical pointers to ensure you dine like a true Segovian.

Order the Menu del Día at Lunch
If you want the best value, eat your main meal at midday. Most traditional restaurants offer a fixed-price menu that includes a starter, main course, dessert, and wine. It is the most economical way to sample authentic local dishes without overspending.

Share a Plate of Judiones
Portions in Castile are notoriously generous. If you are ordering the famous beans as a starter, consider sharing one plate between two or three people. This leaves room for the heavy roasted meats that are sure to follow.

Check the Oven Schedule
Cochinillo is often cooked in specific batches. If you arrive too late in the afternoon, the first batch may be sold out and you might have to wait for the next firing. Ask the staff what time the pig comes out of the oven to ensure you get it at its crispiest.

Look for the "Asador" Label
Restaurants that specialize in roasting will often call themselves an "asador" or "casa de comidas." These terms usually indicate a focus on wood-fired cooking rather than a generic menu designed for tourists. Step inside and look for the glowing embers of the oven.

Embrace the Sobremesa
Do not rush your meal. In Segovia, the time spent lingering at the table after dessert, drinking coffee or a digestif, is sacred. Waiters will not bring the check until you ask for it, so relax and enjoy the conversation and the atmosphere.

Segovia is a city where history is not just seen but tasted. The smoke from the ovens, the earthy scent of the beans, and the rich aroma of roasting lamb create a sensory map of the region’s past. Choosing to eat in a traditional restaurant here is a way of participating in a living history that predates the modern borders of Spain.

As you wander back through the narrow cobblestone streets after your meal, you will understand why Segovia’s culinary reputation endures. It is a place that respects the land and the animal, transforming simple ingredients into feasts worthy of kings. Bring your appetite, take your time, and let the city feed your soul.
