Pamplona is a city that lives and breathes its culinary traditions, and few experiences capture its soul quite like the ritual of hopping between pintxos bars. While the world knows Pamplona for the adrenaline of the San Fermín festival, locals know the true heartbeat of the city lies in the narrow streets of the Old Town, where glass counters gleam with miniature edible works of art. The culture here is not about rushing; it is about strolling, socializing, and savoring the distinct personality of each establishment.
The pintxo tradition in Pamplona is distinctly Navarran, setting it apart from the coastal styles of San Sebastián or Bilbao. Here, the emphasis is often on hearty, robust flavors, generous portions, and the deep, earthy produce of the surrounding region. You will find everything from the simplest skewer of a gilda to elaborate foie gras creations, all designed to be eaten in two or three bites while standing at a polished wooden bar.
Navigating this scene can be overwhelming for a first-time visitor, as the density of quality bars in the Casco Antiguo is staggering. Streets like Calle Estafeta, Calle San Nicolás, and the areas surrounding the Plaza del Castillo are essentially a labyrinth of gastronomic temptation. Knowing where to go is the difference between a good night out and a truly transcendent culinary pilgrimage.
The key to mastering the "poteo"—the local term for the pintxos crawl—is understanding that each bar usually specializes in one or two signature items. You do not go to one place for everything; you move from spot to spot, ordering the house specialty, usually paired with a crisp local wine like a rosado or a small beer called a zurito. It is a dynamic, fluid way of eating that encourages conversation with both bartenders and strangers.
Because the quality of ingredients is paramount, many of the best establishments pride themselves on sourcing from the fertile banks of the Ebro River and the Pyrenean foothills. Expect seasonal vegetables like artichokes and white asparagus, wild mushrooms, and high-quality meats that reflect Navarra’s agricultural heritage. This dedication to local produce ensures that the menu changes with the calendar, offering something new to discover with every visit.
To truly eat like a local, you must abandon the idea of sitting down for a formal meal. Instead, embrace the hustle and bustle, the napkins scattered on the floor, and the loud chatter of a bustling bar. It is a sensory experience that engages not just your taste buds, but your entire awareness of the city’s vibrant social fabric.
Whether you are a seasoned food traveler or a curious first-timer, this guide will navigate you through the essential stops. Below is a curated selection of the best pintxos bars in Pamplona, chosen for their consistency, atmosphere, and dedication to the craft of Navarran cuisine.

We checked 4 different tapas/pintxo bars in the same night and the foie pintxo ar Gauxho was definitely the best one: simple ,stylish, marvelous.
We took few others as wel and well good enough, yet a totally different level.
All staff was very friendly as well, so well deserved five star.

Great place worth the hype. Was fairly busy but not too long to wait to grab a standing spot at the bar - definitely get their truffle octopus and truffle eggs. Both are amazing dishes - I'm not a fan of cooked fish gras but apparently its good here too. Just off the main square worth a visit if in town.
Stephanie★★★★★
Superb foie gras, so good we had to order two portions each! The next best thing, pintxos-wise, was the mushroom & egg offering.... just deliciousness personified (as long as mushrooms are your thing!)
Scott Goodson★★★★★
The bar is on a corner, as the important bars always are, positioned to watch two streets at once.
Inside, the beer is pulled by a big man with black painted finger nail, he does it with the economy of someone who has done this ten thousand times and will do it ten thousand more, or won’t, and knows it either way.
The pintxos are arranged along the counter with the deliberate abundance of a still life painted to remind you that everything decays. I am not fooled. I have read about still lifes. The skewered things glisten.
José orders the ones with the prawn, other delectables, the egg and truffle, because the egg is a small planet and we are feeling planetary. It is all very good. This is the trouble with good things: they raise your expectations for a world that has no intention of meeting them. The txakoli is poured from a height, a small theatre of aeration, and feel briefly that I have been let in on something, which is exactly what they want me to feel.
The seats are hard to come by as they were when Hemingway was here. The men at the bar are loud in the way that means they are happy, or performing happiness, which in Pamplona may be the same municipal ordinance.
Somewhere, a bull is being remembered. Somewhere, always, a bull.

This is our third visit to Pamplona, and for the third time, we're eating here. The umami flavor here is absolutely the best. We recommend it 100 percent.

Underwhelming. The restaurant lacks soul and the food, whilst passable, hardly sets ones tastebuds alight. Service was efficient and friendly. The fish soup tasted suspiciously 'shop bought', the grilled prawns rather limp although the lamb was at least hot and freshly grilled. We wouldn't return as there are far better venues to visit in Pamplona.

Great Spanish restaurant with outstanding food quality, an excellent wine selection, and a warm, lively atmosphere. Our meals were full of flavor and beautifully prepared. A perfect place to relax, enjoy great wine, and savor the spirit of Spanish cuisine. Highly recommended!

Great bar for a drink and some beautiful pintxos. Service was excellent and we loved their txistorra (Basque chorizo) and the smoked cod. Highly recommended to include in your pintxos crawl of Pamplona.

The bar was super-busy when we arrived but the restaurant in the back was almost empty. It did fill up later, improving the ambiance.
I enjoyed my polpo and dessert, my friend found her dish too heavy in sauce. Very friendly waiter and excellent wine.

We had dinner here a couple of weeks ago. On the phone people were polite and it was easy to make reservation despite being a saturday night. Once in the restaurant it took 15 min before someone came to our table. They were friendly but not very attentative. the steak was great although the waiter did not understand our request not to have the foie gras with out steak. The childrens menu was good but nothing exciting and very expensive at 17 Euro (for fries and some chicken). Real disappointed were the toilets which according to my girlfriend and daughter were disgusting.

Excellent pintxos bar in Pamplona. The ambiance is cool and welcoming. The jamons hanging over the bar and array of pintxos is amazing. We had txakuli as well! Highly recommended.

Incredible. Pinchos were stunning!
Wished I could have had one of everything they were that good.
As an Australian on the Camino, sadly, my Spanish is deplorable, but they still made me feel welcome and we got by. The vino was also outstanding.
Do not pass up an opportunity to partake here. You will not be disappointed.

Came early to avoid disappointment that you can't get a table. Excellent wine and a fabulous selection bof freshly prepared Tapas. I came twice. Not to be missed.

A unique gastronomic experience, with excellent and delicious Pintxos, generously sized to pair wit a goog wine. The price is fantastically reasonable and the place is beautiful and familiar. To repeat in the future.
Bruce Hamilton★★★★★
The food here is bomb! (Californian for really good). Great flavors, wide variety of options, and best of all they're well executed. We enjoyed the ongo (champi) croquettes, the scallop and cheese dish, (reminded us of clam chowder from San Francisco), and the caña was really nice too. Hopefully we'll be back! €15 for 4 plates and a caña after a tip. Fair prices.

I took the frito de huevo number 2097024 since January 2015. Frito de huevo is the best known pincho at Rio. It is a mix of creamy croquette and a soft-boiled egg, entirely enclosed in a crispy fried shell. Very good, perhaps not my top pincho though in Pamplona.

Best pincho de tortilla con chistorra of my life!!! Probably the best tortilla I’ve ever had!
I visited this place 3 times during a weekend, so that says it all! Even though the service is a bit slow for my taste, it’s worth the wait. Most of their food is very good, and prices are just right for the quality!
Next time I visit pamplona this will be one of my stops for sure!!!
Marc Berry★★★☆☆
Was advised to go try the egg pincho here, as it's famous and sold over 1.6m of them, with a counter that updates daily to tell you exactly how many it has made. The egg is simply hard boiled with a bechamel sauce, in a deep fried batter.
In my opinion, fairly tasteless throughout.. even the sauce was plain as anything. Nice place though
Bogdan Ionescu★★★★★
We reached the place around 2 pm on a rainy Saturday and it was packed. Lovely people, chating, having drinks and food, really enjoying themselves. Lively athmosphere, loud, friendly, fantastic! The service was super fast and friendly, prices are ok for the quality and the food was delicious - we had the jamon croquetes, octopuss pintxo (oh, mama!), schrimps in panade (divine!), smoked cod toast. The beers and vermuth were also very good. I definitely recommend this place for a fun and tasty time in Pamplona!

What a fantastic dining experience. From the moment we arrived, the staff made us feel genuinely welcome and provided attentive, friendly service throughout the evening. Every dish was beautifully presented, incredibly fresh, and full of flavor, with each course better than the last.
The atmosphere was lively yet elegant, making it the perfect place for a memorable meal with friends or family. It’s clear that great care goes into every detail, from the quality of the ingredients to the overall dining experience.
If you’re visiting Pamplona, Baserriberri is absolutely worth a visit. I highly recommend it and can’t wait to return.

Amazing food and place. We loved everything, specially the “croquetas de txuleton” and the “costillar de vaca”. Unfortunately, the service offered by an elderly spanish was really rude to us. Nevertheless, the waitresses were incredible.
Cesar Arias (Cesar As)★★★★★
When visiting Pamplona this place is a must-visit! The first day I arrived in Pamplona I visited their bar for a quick bit and had very good pinchos (their famous bomb looking one included)! Most of what I tried was delicious!
A couple of days later I made reservations for dinner with a group of friends and we were all surprised with the quality of the food and service! Make sure you try their steak and the slow cooked beef ribs, these two dishes are incredible!!!!
I will keep this one in my rotation every time I visit Pamplona!!!
Lea-Maria Nahas★★★★★
In the heart of Pamplona, this place stole my heart. The food was of high quality, and they were nice enough to offer an item not on their menu just because I was craving some greens. Their wine selection is also extensive and the staff will help you find the right one. All in all, it was a very positive experience
Solange Bohling★★★★★
What a find! Recommended to us by a tour guide and it didn’t disappoint. Not a lot of vegetarian options, but the ones they had were fantastic and the hosts were really great helping me pick them out. My husband isn’t vegetarian and absolutely loved their pintxos too 🙂 Highly recommended!

The 'frito de huevo' was super soggy and there was half an egg missing the yolk... It was a sad sad dish. The cheese croqueta was ok.

Very friendly, welcoming bar, with an excellent range of beers (and good selection of all other drinks, of course!), and various good-value pintxos. We couldn’t find them on the menu but they’ve twice prepared us a plate of really good Patatas Alioli; the best we’ve found for a good while!

So an introduction to this bar was looking for change for the lavanderia around the corner which only takes cash and has no change machine.
Anyway because they gave change we decided to come here for coffee and a coke while waityfor the washing and later a beer with Spanish omelette with onion and 2 hot chocolates.
The Spanish omelette was really tasty.
The Alhambra beer here is lovely.
The guy behind the bar is very helpful and friendly.
Also it doesn't close for siesta which many places do around the albergue.

Nice bar, big choice of tapas, but better order from the menu.
Crowded at nights (Thursday-Sunday extremely).
We’ve ordered three tapas and all of them too many onion 🧅, potatoes 🥔 and sunflower oil(((
Soter Soteria★★★☆☆
It was Sunday and after Mass at the cathedral we went to this place based on the online ratings. When we walked the boss/owner didn't welcome us; he just sat there. A man behind the bar did. And we asked if we could sit at one of the free tables (with tablecloth, that whole section was open) and he said OK but we could only order from the menu. We said that was fine. But then the boss/owner said no. We would have left but a regular table freed up and we were hungry. We ordered 4 things (including the gambas al ajillo which were dry). We went to another place nearby and had a great time and great food. I wouldn't recommend this place. Go to Bar Gaucho instead.

Fantastic experience
Walked by this place while walking to the main square. The place was packed and decided to comeback after checking out the town.
Although we came back almost an hour later, the palace was still full; we decided to try our luck and found our way in. We had no idea how things worked, since everyone inside had a drink and tapas, but it wasn't clear who was waiting on anyone. That's when Iñaki spotted us and came from behind the counter. He quickly explained how things worked out and offered to take care of us. Waited until a spot on one of the community tables opened up and sat ourselves. From that moment on, we were able to enjoy one of our best meals in Spain.
Food was great, but Iñaki made our evening truly memorable.

A regular pintxos (small bites) place, mix service, we got one good and one bad server. Initially the waiter said I need to order at the bar but then another server mentioned that they can take the order from the table.

We came to this bar hungry, soaked to the bone from the pouring rain, and left full, warm, and very satisfied. From the moment we walked in, we felt the welcoming atmosphere. Very friendly staff. I ended up trying a bocadillo with calamare and sauce and tried the sangria. Really enjoyed the meal and only spent €7.5

An excellent experience at Gildamut Pamplona. A must-visit for aperitif lovers. Their magnificent variety of vermouths is particularly noteworthy, with options for all tastes, perfectly served and expertly recommended by the staff.
The gildas deserve special mention: a wide variety, made with quality ingredients and original combinations that allow you to try different flavors each time you visit. The atmosphere is welcoming, the service attentive, and the culinary offerings carefully curated. Without a doubt, a place to return to and continue discovering new vermouths and gildas. Highly recommended.

We went for an aperitif with my grandmother and we were delighted. We tried the gildas, croquettes, and torreznos—everything was delicious. The vermouth was also excellent.
The place is very pleasant, the waitresses were incredibly attentive, and they also have an outdoor terrace, which is a big plus.
The only downside I would mention is that the indoor tables are on a floor you have to climb stairs to reach, so it might not be the most accessible for elderly people or strollers.
Even so, the experience was wonderful, and we will definitely be back.

The gildas and vermouth are incredible, the potatoes are delicious. Being able to sit on the terrace with family and the service from Estefany and Patri was a 10/10. Excellent service. We will definitely be back.

A must-visit new spot for vermouth and gilda lovers in Pamplona. Recently renovated, with a great atmosphere and excellent service from Ángel and Zaira. A huge variety of gildas and vermouth. A fantastic plan for an aperitif. Highly recommended.

Incredible experience and service; we've been missing such well-maintained hospitality. The waitresses are always at your service. The gildas are on another level. And let's not forget the atmosphere—they've breathed new life into that terrace and that corner that Don Ibane so desperately needed. Ángel and Zaira are fantastic!
Tips for Navigating the Pintxos Scene
To make the most of your culinary journey through Pamplona, it helps to understand the unspoken rules and rhythms of the local bar culture. While the experience is meant to be relaxed and spontaneous, a little insider knowledge goes a long way. Here are some essential tips to ensure you navigate the city’s gastronomic landscape like a seasoned local rather than a lost tourist.
1. Order the Specialty
Every great pintxos bar has a signature dish that made them famous. Do not waste stomach space on generic tortillas or standard sandwiches unless that is what the bar is known for. Look for the item that everyone else is ordering, or check the chalkboard behind the bar for hot specials. If you see a crowd gathering around a specific platter, that is your signal to point and ask for it.
2. Master the "Txikito" and "Zurito"
Portion control is the secret to surviving a long night of bar hopping. A "zurito" is a small glass of beer, typically half the size of a standard caña, allowing you to pace yourself. For wine lovers, ask for a "txikito" of red or a "rosado," which is the traditional pairing for oily fish and rich meats in Navarra. Avoid ordering large drinks if you plan to visit more than three bars.
3. Don’t Be Afraid to Ask for Hot Pintxos
While the cold pintxos displayed on the bar are beautiful and tempting, the true magic often lies in the kitchen. Many of the best bars in Pamplona have a menu of hot pintxos or "raciones" that are made to order. These are almost always fresher and more impressive than what has been sitting on the counter. Look for a paper menu or ask the bartender, "¿Hay algo caliente?" (Is there anything hot?).
4. Pay Attention to the Napkin Etiquette
In many traditional bars, especially during busy times, it is customary to throw your used napkin on the floor. This is not considered rude; it is a sign of a busy, successful bar and actually makes it easier for the staff to clean up between waves of customers. However, if the bar is quiet and the floor is clean, it is safer to place your napkin on the counter or ask for a small plate.
5. Go Early or Go Late (But Avoid the Middle)
The rhythm of eating in Pamplona is very specific. The first wave of pintxos eaters usually arrives around 1:00 PM for the pre-lunch "aperitivo" and then again around 8:00 PM to 9:00 PM for the evening poteo. If you go at 4:00 PM or 7:00 PM, you may find kitchens closed or selections picked over. Aligning your schedule with local meal times ensures you get the freshest food and the best atmosphere.
The beauty of Pamplona’s pintxos culture is that it rewards curiosity and a willingness to go with the flow. Do not over-plan your route; sometimes the best discoveries happen when a bar is too crowded, and you stumble into the quieter place next door that turns out to be a hidden gem. Allow yourself to be guided by the aromas wafting from the grills and the recommendations of the people standing next to you at the bar.
Ultimately, a night spent exploring these bars is about more than just food; it is an immersion into the social identity of Navarra. It is the clinking of glasses, the sharing of a final bite, and the slow, satisfied walk home through ancient cobblestone streets. Take your time, savor every bite, and you will understand why the people of Pamplona are so fiercely proud of their culinary heritage.
